The weather is warming up and the smell of grilling will soon be filling most neighborhoods across Montana.

To be honest, Montanans don't just grill in the spring and summer. For a lot of people it is an all-year-round endeavor. But when the seasons change that's really when grilling season ramps up.

One of my favorite BBQ treats is a nice rack of ribs. I don't have the time or patience to be an expert on grilling ribs. That doesn't stop me from occasionally giving it a try. But for some reason they never stack up to the best ribs in the state. I guess if they did taste as good as the best, I would be grilling ribs for a living and not talking on the radio.

Most of the time when I get the chance to write about anything that is the "Best of" in Montana I have to add it to my list of places or foods to try. Not this time.

Not only have I had a chance to sample these ribs, I have eaten them often and I even have a recipe of my own using these ribs.

According to Cheapism.com the best BBQ Ribs in Montana are made by The Notorious P.I.G. There are two locations in Missoula and they are closed on Mondays. Owner Burke Holmes was born in St. Louis and is a fan of their sports teams. You can tell by the jerseys displayed in the first location in Missoula at 247 Front Street.

The key to getting some good eats from The Notorious P.I.G. is to order early. They regularly run out of items towards the end of the day. Not only do they make ribs, but they also make some amazing burnt ends, tri-tip, beef brisket, pulled pork, and turkey. Don't sleep on the sides either, the pit baked beans and the deviled eggs potato salad are fantastic.

The ribs are so smoky, in a good way, that you may think you spent some time by a campfire the next day. If you ever get the chance to try their ribs and have any leftovers, I highly recommend using the meat to make some homemade fried rice. It is fantastic.
